Protein-Packed Egg White Bites (Make-Ahead Recipe)

Some mornings there's time for a slow, mindful breakfast. Most mornings, there isn't. That's why I love these egg white bites.
They're protein-packed, easy to customize with whatever vegetables you have on hand, and they store beautifully in the fridge for up to five days. Make a batch on Sunday, and you've got a grab-and-go breakfast or post-workout snack ready all week long.
Why This Recipe is a Keeper
Egg whites are a lean, high-protein base that pairs well with almost any vegetable or seasoning combination you like. Baking them in a muffin tin means portion control is built right in, and cleanup is minimal since everything cooks in one pan.
This version uses broccoli, tomatoes, and mozzarella, but treat it as a template. Spinach, mushrooms, peppers, or a sprinkle of feta all work well too.
Egg White Bites
Yields: 12 bites Prep time: 10 minutes Bake time: 18 to 22 minutes
Ingredients
2 cups liquid egg whites (or about 12 egg whites)
1 cup chopped broccoli, lightly steamed
½ cup diced tomatoes
½ cup shredded reduced-fat mozzarella cheese
Salt and freshly ground black pepper, to taste
Garlic powder, optional
Olive oil or nonstick cooking spray
Directions
Preheat your oven to 350°F.
Lightly coat a 12-cup muffin tin with cooking spray.
Divide the broccoli, tomatoes, and cheese evenly among the muffin cups.
Season the egg whites with salt, pepper, and garlic powder, then pour evenly over the vegetables, filling each cup about three-quarters full.
Bake for 18 to 22 minutes, or until the egg whites are set and lightly golden.
Let cool for 5 minutes before removing from the pan.
